Crumpets

"I have found, upon inquiry, that there are many persons moving in genteel society, decently educated, possessing some knowledge of foreign languages, music, dumb-bells, and the use of the globe who haven't the faintest idea what is the difference between muffins and crumpets." I have been looking for a good crumpet recipe!! Thank you!! Are those mason jar rings that you used to cook them in? What a great idea!

Maya, if you use the lid rings, grease them well. It was the only round thing I had on hand. I've made the crumpets twice now and this morning I quadrupled the recipe and they were still finished off! I'm going to ask Sean to cut some rings for me from a can and sand the edges so they aren't sharp.

Washed tuna cans with tops and bottoms removed make great crumpet rings - and no sharp edges.
