Use Way more apples than your recipe calls for. I use about 5 lbs. per pie. (Sean pulled these from one of our trees last night.) If I dropped the pie on my foot, I'd be in trouble. Not that I'm in the habit of dropping pies....
Use a really good crust recipe. With REAL butter.
Roll the dough out between two pieces of waxed paper.
It makes pie making a breeze.
After assembling your pie, add some extra love on top with pats of REAL butter.
Then sprinkle with cinnamon and sugar.
Sprinkle on a little more. Extra love and sugar is good.
Use leftover apples and pie crust to assemble a wee pie for the young-uns.
