Breakfast Casserole



We had this Sunday morning before church and it is so easy and delicious that I'm sure I'll be making it again. The best part was that it filled every one's tummys with leftovers! All this from one pan! Yes, I am truly amazed. If you have a smaller family, you may want to halve this recipe.


Whisk together 6 eggs and two cups milk. Cook one pound of turkey breakfast sausage on the stove top, crumble and set aside. Cut a loaf of Italian bread (I'm sure any bread would do) into one inch cubes and toast in a 400 degree oven for 8 minutes. In a large bowl combine bread, egg/milk mixture, cooked sausage, half of a chopped onion, and one cup of shredded cheese. Pour mixture into a greased baking pan, cover and let it sit for at least two hours or overnight in the fridge.

In the morning, sprinkle a little more cheese on top, pop into a preheated 350 degree oven and bake for 50 minutes.
